Coconut Porridge

This is my favorite Porridge recipe. It’s easy to make, satisfying and extremely nutritious, not to mention it tastes like dessert!

Serves 1 (vegan/glutenfree)


2/3 cup almond milk
1/4 cup shredded, unsweetened coconut
1/4 tsp salt
2 tablespoons almond flour
1 tablespoon flax meal
1 tablespoon agave (or 1 tsp stevia powder)
1/4 cup raspberries
Dark chocolate, broken into pieces

How to:

  1.  In a small sauce pan over medium heat, heat milk until warm. Add the next five ingredients and stir.
  2. Cook for 2-3 minutes, watching that it doesn’t burn on the bottom, until the mixture thickens to your liking.
  3.  Remove from heat, transfer to a bowl (or eat out of the pot like I do!) and allow to cool for a minute or two before adding chocolate and raspberries.
